In this interview, chef Sébastien Renard gives an insight into his culinary philosophy, his sources of inspiration and the unique aromas that shape the experience in Maison Renard. 

Can you tell us the exciting history of founding your first restaurant in Béthune (France)?

I have Maison Renard opened in this symbolic house in Béthune on April 26, 2023. This mansion was the first restaurant of the two-star chef Marc Meurin, for which I worked in Busnes for five years.

It was the fulfillment of a childhood dream for me to open my first restaurant and discover my culinary world. I became a restaurant owner from the chef. The adventure of a life.


What is the philosophy of your restaurant and culinary paradise?

To create a unique and original moment by causing emotions.

For me, the guest does not know the menu and discovers the story I want to tell him in the course of the evening. Because if you have the choice, you have the agony, and you don't do without at home.

So I offer three menus: the clef, the Grade and the Violin key, because I play the whole score. For me, cooking is primarily a catalyst of emotions. I try that every dish is an invitation to try, curiosity and questioning.

Your interior is beautiful. What has inspired you with this enchanting decoration and can you tell us the dreams and wishes that have fueled the vision behind the interior of your restaurant?

I am lucky enough to have a great architect, Agathe Zlicaric. I owe it to her that I have such a nice restaurant in which I can express my culinary sensitivity. We chose blue "North Sea" tones and lines from our region, which help to create a warm, relaxing and inviting atmosphere. We wanted a lively place where you can hear people laugh.

Your selection from the Glasserie is Symphony. Which aspects of this collection did you address and how did you contribute to the overall atmosphere of your restaurant?

The selection of the table culture was very important to me, as was all the details at the end. I tried to think about every single element to make sense of my work.

It is difficult to describe why Symphony, but I found this collection elegant and the play of light interesting.

If you select the glasses for your restaurant, what selection do you consider essential? What role do crystal -clear glasses play in the culinary experience of your guests?

Wine Is full of sensitivities, emotions and fragility, so the glasses must be coordinated. We don't sell one Wine, but tell the story of a winemaker and a terroir to take customers on a trip. The glass must Wine underline without putting it in the shade.

In my restaurant we chose the entire range to Wine, that we serve to be as close as possible.

What criteria do you prefer when choosing table glasses for your restaurant?

Aesthetics, durability and originality are very important criteria for me. I have to admit that I really liked the fact that this collection is a novelty. I try to be a pioneer in my decisions.

We are curious ... Could you tell us your favorite wine ever and maybe share a recently made discovery with us, which has left a lasting impression and which you would recommend wine lovers with all my heart?

The wines of the winery of Didier Dagueneauwho is an absolute must on the Loire and sublimates the plants of Pouilly: Pure-sang and Silex.

I recently had a wine tasting bigtriggered emotions: the Riesling Cuvée Frédéric émile of the Domaine Trimbach in Alsace. What a joy!

What exciting plans do you have for the coming year?

To question myself again and again to improve me and the story of my first restaurant Maison Renard to continue.

Take my superhero teams with them and flare up to create a real family. Because without my team I am not worth much.

I will also visit the Stölzle factory to discover the craftsmanship and passion behind the glasses.
