About Cookie
Cookie Heinz Gindullis is more than just one name; He is a pioneering force in the Berlin catering scene. Born in London, Cookie's thirst for adventure led him to Berlin in 1992 at the tender age of 17. After modest beginnings as a plate washer, he quickly made a name for himself by organizing unique parties on Tuesday and Thursday, which caused him to open the legendary cookies club at 7 different locations. However, one of his boldest chess trains was the opening of cookies Cream, a vegetarian fine dining restaurant in Berlin, long before the trend, and thus its future-oriented approach and its commitment to innovative cuisine. In 2014 he converted the last cookies club restaurant into today's trendy and atmospheric restaurant Crackers. Cookie was honored for his groundbreaking contributions in November 2022 with the Berlin master chef award "Gastronomic Innovation". With his fingers always at the pulse of the catering and the nightlife of the city, cookie stands for innovation, continuous growth and a passion that Berlin's culinary history has repeatedly reinvented.
How did the fascinating story come about behind the star restaurant Cookies Cream?
The Cookies Cream, founded by Cookie Heinz Gindullis in 2007, has created a unique place in the culinary scene in Berlin. Hidden in a back yard in Behrenstrasse, the entrance offers the atmosphere of a Speakeasy restaurant, which focuses on fresh vegetables. Under the direction of chef Stephan Hentschel, the 2018 restaurant was awarded a Michelin star that it still holds today. While the restaurant with Nicholas Hahn on the culinary rowing goes into a new era, its commitment to sustainability remains stronger than ever. The seasonal vegetables, which is mainly bought from March to September, come directly from its own garden in Krielow, Brandenburg. With its dynamic spirit and respect for its roots, the Cookies Cream stands for innovation, quality and the true essence of Berlin.
Could you tell us more about your restaurant philosophy and your vegan cuisine?
It is about putting vegetables and versatility in the foreground. We do not work with pasta, rice or tofu, but focus on using the freshest vegetables and their best season to get the best out of them. Nicholas Hahn, known for his precise craft and innovative menu compositions, brings his unique note into the restaurant. His recent creations radiate imagination and craftsmanship. From the nuanced potato ceviche with Leche de Tigre to the braised pepper with Jalapeño, each dish shows the rich variety of the seasonal vegetables.
What did you like the most with the Starlight glasses?
Your design and functionality.
When choosing glasses which aspects are particularly important to you?
For us, the most important aspects of wine glasses are functionality and durability, since we have many guests and our glasses are heavily stressed. In addition, the versatility of the glasses is crucial. It is important that we can serve different wine styles with just a few glasses.
Which Wine Would you currently make an absolute recommendation and why?
Our sommelier Jan Wienecke currently recommends the myth Sparkling Wine by Lena Singer Fischer. It is a mixture of Chardonnay and Pinot Noir, made incredibly refined and complex. In his opinion, he is one of the best German sect of recent years. German Sparkling Wine In general, it is becoming increasingly popular and will certainly make even more waves in the near future.
